I don't collect too much nowadays (maybe dresses if anything?). Most of my collecting urges come out when it comes to video games. Games like Pokemon or Viva Pinata can distract me for ages because I love the idea of completing a collection. In Zelda, my new thing is collecting all the heart pieces and items. I collect shoes, for sure, but also anything badger-related, (my totem animal) and crowns (my name means "princess" in Hebrew). And yes, my collections get out of hand.
